along the Sunshine Coast of Queensland, the first ginger harvest
begins. The crop of delicate, five-month-old rhizomes is known as
baby ginger - the pride of the Australian ginger industry. At this
stage, the ginger has developed the perfect flavor profile without forming
appreciable fiber.
