In February of each year along the Sunshine Coast of Queensland, the first ginger harvest begins.  The crop of delicate, five-month-old rhizomes is known as baby ginger - the pride of the Australian ginger industry.  At this stage, the ginger has developed the perfect flavor profile without forming appreciable fiber. 

Australian Ginger is recognized world-wide as the finest processed ginger available.  It is 100% natural, containing no preservatives or additives.  The roots are harvested while still young and tender, then cooled and steeped in sugar syrup and cut into slices.  Use it in chutneys, salsa, soups or eat it plain.
