Many people love a bit of tart or bitter taste when they bake fruitcake.  We carry the orange peel and the lemon peel.  Both make excellent offsets to the sweet fruits of the cherries and pineapple, and they add a bit of a different texture.  Of all the different fruitcake ingredients, the orange peel and the lemon peel are the most controversial and many people who don't like fruitcake would think differently if these weren't added.  On the other hand, there is a strong crowd of people who love these tart additions.
